Pernod is made from distillates of star anise and fennel, married with distillates of 14 herbs including chamomile, coriander and veronica. It has a relatively low licorice content (unlike Ricard and Pastis 51 for example) allowing for a more subtle herbal flavor. Substitute it for absinthe in classics like a Death in the Afternoon, or use it in a spritz.
