This is a marc, or a grape distillate, produced from Chardonnay and Gamay. It's a double distillation of the marc and lees of Vincent Marie of No Control's natural wines, which yields a clear alcohol. After this distillation, Marie macerates lemon verbena, spearmint and peppermint for 48 hours. This is heavenly stuff, a must-try for those who like spirits distilled from fruit, or those who are interested in the Burgundian tradition of marc.
