Neversink Bourbon is a rare bird—this is the distillery's very first release of whiskey, given that their (excellent) production typically focuses on non-table apples (eau de vie) and gin. Made from a mash of New York-grown corn (60%), winter wheat (20%), and malted barley (20%), and the grains are all milled on site at the distillery. Twice-distilled in a pot still to underline complexity, and aged in new-charred American oak for a minimum of two years. Caramel, toasted grain, ruddy fruit. Move over, Kentucky: this is New York.
