Wild raspberries, which are rare in the Alsace, are sourced from a small grower in Romania, then shipped overnight to the Metté distillery. They're then macerated for six days in the distillery's entry-level grape eau-de-vie; after maceration, it's all distilled once in a Charente-style copper pot still. Aged for 6-8 years in stainless steel tanks before bottling! A real delicacy.
