This iteration of the classic Andean liquor is made predominantly from quebranta and negra criolla grapes coming from Ica and Arequipa, regions at the foothills of the Andes in what is considered the heartland of Pisco by some. Characterized by herbal, grassy and earthy notes, it makes an excellent base for a Pisco sour!
