Guillaume Lavie's bottling of the famous vineyard 'Clisson' in Muscadet, a site that is based on granitic sand and silt, with these particular vines planted in 1957. This opulent but salty white wine gets over two years’ worth of élevage on lees in an underground concrete tank; it’s unfined/unfiltered and has no added SO2. Wet wool, dried lemons, tart green grapes, creaminess and saltiness: this is the ultimate fisherman’s wine, and it’s exciting to see a young new producer making a new iteration of this very historical site in Muscadet.
