Hiyu's 2019 'Fèis' comes from a field blend vineyard called Scorched Earth, on clay and basalt soils. In 2016, Hiyu grafted this vineyard over to a mix of local, forgotten grape varieties from Bordeaux circa 400 years ago: multiple clones of heirloom Cabernets, Merlot, Malbec, Tannat, Abouriou, Fer Servadou, Negrette, and so on. What's amazing about this wine is that isn't heavy or overly dark, given the warm, nearly-desert climate of the eastern Gorge and the structured quality of these grapes. Instead, 'Fèis' is soft, pale, almost ethereal, with some darker fruit and earth notes you'd expect from the varieties. Bordeaux and Burgundy crossed—and napping in a meadow.
