Hachinohe, a microbrewery in Aomori prefecture, is known for using organic and locally-grown sake rice varieties called Hanafubuki and Masshigura. For their Mustu Hassen Pink Label, the brewery collects wild yeast from the skins of Aomori strawberries, giving the sake a bright and fruity bouquet of strawberry, lychee and mango. The result is a dry but lush and opulent sake, with plenty of fresh flavors that compliment both Japanese and Western dishes.
