In the cool, rocky village of Baghdati of Western Georgia's Imereti region, Gaioz, a natural wine pioneer, and his sons produce nine super fresh, low-alcohol wines. Using indigenous grapes like Tsitska, Tsolikouri, Sapere and more, fermented in traditional Kvevri and without use of SO2 or industrial yeast. Their focus on minimal intervention showcases the region's terroir, resulting in bright but deep flavors reflecting the local landscape.
