The distillery Purkhart eau-de-vie is special: made entirely from the alpine variety of pears known as “Williams” pears, and native to the Italian / Austrian borderland of Alto Adige or Südtirol. Rich, deep, strikingly pure — totally insane as a replacement for whiskey in a whiskey sour; also delicious as a 50/50 martini with a well-balanced dry vermouth.
