Pablo Lara comes from a long line of agave farmers in Jalisco. Seeing the impact on agave farming from the increasing demands of the tequila industry, Pablo started the agricultural project Santanera. Aimed at reviving organic and sustainable farming practices—which have been predominantly lost to the tequila industry—with a deep focus on terroir, Santanera began supplying agave to distilleries like Cascahuin. Santanera now also produces some stunning tequila of their own. Their blanco shows notes of figs, lime peel, and menthol. Drink it neat or on the rocks.
