Cyrille Sevin is a much admired and hard-to-find natural winemaker in one of Touraine’s most lovely and interesting appellations, Cheverny. This flagship white from his 11-hectare winery is composed of about 2/3 Sauvignon Blanc and 1/3 Chardonnay and the local variety Menu Pineau, all co-fermented together in stainless steel and aged there for a year. Light-to-medium bodied, with lemongrass, a pretty sensation with nice persistence. Think English idylls; a sunny day in Ireland; sheep farmers, great cheese, cool caves in the Loire. It’s a yellow-and-green, mineral beauty.
