Carolina Gatti's Ratatuja hails from Veneto, Northern Italy. Ratatuja is a blend of several organically grown grape varietals - Glera, Pinot Bianco, Verduzzo, Chardonnay, Tocai - combined into one, hence Gatti naming this sparkler after the famous French dish ratatouille (a mix of stewed vegetables). Golden in color due to a few days of skin contact, with a deep smokey profile interspersed with notes of brandied peaches. Very soft bubbles.
