It's not quite fair to call most of the "ciders" we carry by that name, as all of them are, instead, fine wines made with fruits that aren't grapes. This is absolutely the case with Stefan Vetter: everything he touches turns to light, glitter, music. Quince is a challenging fruit to work with: all skin, no juice, tannic unless you cook it — Vetter manages to coax, out of only a handful of his neighbors' quince trees, something ethereal and unbelievably fine. Floral, perfectly dry, with almost no alcohol: this should be enjoyed on its own, as it will outshine most food.
