Ferment utilizes about a week's worth of carbonic maceration, without additives, filtration or added sulfites. The nose is immediately intriguing: bright raspberry color, notes of crushed red berries, a very pretty floral thread running through it. On the palate, it is a vibrant, invigorating wine, carried by a salinity that almost sparkles on the finish.
